2014 Chablis, Grand Cru, Les Preuses, Domaine Billaud-Simon (12 x Bottle)

France Burgundy Chablis

The 2014 Chablis Grand Cru les Preuses comes from 63-year-old vines and sees 16 months in 10% French oak, the remainder stainless steel. It has a lifted, oyster shell scented bouquet that is very well defined, even a touch of mint developing with continued aeration in the glass. The palate is fresh and vibrant with crisp acidity, quite saline towards the finish with a long, lightly spiced aftertaste. This has great ageing potential and may merit a higher score down the line.

Vinous

(from the oldest vineyard of the domain; aged 50% in stainless steel and 50% in old barrels): Bright, pale yellow. Peachy fruit salad on the nose. Plush and very ripe but quite closed today, showing a creaminess of texture and a faintly phenolic quality but only moderate detail and nuance. Comes across as almost exotic following the Montée de Tonnerre. This wine needs some oxygenation from old barrels, noted Bernard Hervet.

Vinous

(just a bit of oak here): Perfumed, expressive aromas of lemon zest, white pepper and flowers. A creamy mid-palate texture is leavened by a brisk, slightly tart lemony quality. Like the Clos, this is a distinctly masculine style of Chablis (I normally think of the typically floral Preuses as more feminine). The penetrating finish is tactile, savory and long. This energetic wine offers excellent aging potential.
